Healthy Ice-Cream Study Snack!

Chocolate Nice Cream

Today’s recipe is for a healthy take on chocolate ice cream… chocolate NICE-cream! It’s extremely easy to make and is a fantastic substitute for normal ice cream, which can often be high in sugar and leave you with only a short burst of energy which won't do you any good when trying to study. What is more, this recipe is vegan friendly!


  • 2 bananas
  • 5 pitted dates
  • 2 tablespoons raw cacao powder
  • 140ml coconut cream
  • ¼ cup rice milk (however you can substitute this for other milk of your preference)
  • fresh berries (optional)


1.Cut the banana into smaller pieces and place them in a blender.

2.Add the 5 pitted dates, cacao powder, coconut cream and milk

3.Blend until you have a smooth consistency

4.Place in a freezer friendly container and freeze for approximately 3 hours or until the mixture is firm.

5.Scoop into smaller bowls, serve with some fresh berries if you like!

What makes this even better than normal ice cream is that it includes the bananas, which are low GI (Glycemic Index). This means that the NICE-cream will be more slowly digested and there will be a lower and slower rise in blood glucose. Unlike normal ice cream which will give you a quick burst of sugar fuelled energy, bananas will allow for longer expenditure, making it a great snack to have before completing a longer study session!
